Hey everyone! I just tried this recipe last night, and it was SO good I had to share. It’s simple, healthy, and super satisfying—a perfect quick meal or side dish. Hope you love it as much as I did!
Ingredients:
- 1 bunch broccoli rabe (about 1 pound), trimmed
- 3 tbsp olive oil
- 4 garlic cloves, thinly sliced
- 1 can (15 oz) white beans (like cannellini or navy beans), drained and rinsed
- Zest and juice of 1 lemon
- 1/4 tsp red pepper flakes (or more if you like heat )
- Salt and pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Blanch the broccoli rabe for 2-3 minutes, then transfer to an ice bath to stop cooking. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- Toss in the white beans and stir for 2-3 minutes to warm them through.
- Add the broccoli rabe to the skillet, toss everything together, and season with salt and pepper.
- Stir in the lemon zest and juice right before serving for that fresh, zesty kick.
