Ingredients​

  • 1 medium-sized cauliflower head, cut into florets
  • 2 cloves garlic, minced
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons vegetable oil spread or butter
  • 1/2 teaspoon salt
  • 4 strips turkey bacon, cooked and crumbled
  • 1/4 cup green onions, chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese

Instructions​

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  2. Steam the cauliflower florets until tender, about 10-12 minutes. Drain well and transfer to a large mixing bowl.
  3. Add the minced garlic, almond milk, vegetable oil spread, and salt to the cauliflower. Use a potato masher or immersion blender to mash until smooth and creamy.
  4. Stir in the sour cream, half of the cheddar cheese, half of the Parmesan cheese, and half of the crumbled bacon.
  5. Spread the cauliflower mixture evenly in the prepared baking dish.
  6. Sprinkle the remaining cheddar cheese, Parmesan cheese, and crumbled bacon on top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish with chopped green onions before serving.
