Ingredients
- 1 medium-sized cauliflower head, cut into florets
- 2 cloves garlic, minced
- 2 tablespoons unsweetened almond milk
- 2 tablespoons vegetable oil spread or butter
- 1/2 teaspoon salt
- 4 strips turkey bacon, cooked and crumbled
- 1/4 cup green onions, chopped
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
- Steam the cauliflower florets until tender, about 10-12 minutes. Drain well and transfer to a large mixing bowl.
- Add the minced garlic, almond milk, vegetable oil spread, and salt to the cauliflower. Use a potato masher or immersion blender to mash until smooth and creamy.
- Stir in the sour cream, half of the cheddar cheese, half of the Parmesan cheese, and half of the crumbled bacon.
- Spread the cauliflower mixture evenly in the prepared baking dish.
- Sprinkle the remaining cheddar cheese, Parmesan cheese, and crumbled bacon on top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
