- 1 cup unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (such as pecans or walnuts)
- 1/2 cup dried fruit (such as raisins, cranberries, or chopped apricots)
- 1/2 cup shredded coconut (optional)
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
- In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the old-fashioned rolled oats until evenly distributed throughout the cookie dough.
- Fold in the semi-sweet chocolate chips, chopped nuts, dried fruit, and shredded coconut (if using) until well incorporated.
- Using a cookie scoop or spoon, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Gently flatten each cookie slightly with the back of a spoon or your fingertips.
- Bake the Loaded Oatmeal Cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
- Once cooled, store the Loaded Oatmeal Cookies in an airtight container at room temperature for up to one week.
