Hey everyone, I want to introduce you to a cookie that’s wholesome, delicious, and sneaks in some veggies! 
Our Zucchini Oatmeal Cookies are soft, chewy, and packed with the goodness of oats and zucchini. Perfect for a tasty snack that feels a little bit healthy too! 







Ingredients
- 1 1/2 cups all-purpose flour

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups grated zucchini (about 1 medium zucchini)
- 2 cups old-fashioned oats
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins or chocolate chips (optional)
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Prepare Wet Ingredients:
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Combine Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the grated zucchini, oats, and, if using, the chopped walnuts and raisins or chocolate chips.
- Shape the Cookies:
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake:
- Bake for 12-15 minutes, or until the edges are golden and the centers are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
