Did you know mangoes and chicken is a thing in the kitchen? I just discovered a recipe called Mango Chutney Chicken Sheet Pan! It's delicious and deserves a space on your menu. Here's a recipe for Mango Chutney Chicken Sheet Pan:

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 cup mango chutney
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 cups broccoli florets
- Cooked rice or quinoa, for serving
- Chopped fresh cilantro, for garnish (optional)
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
- Season the chicken breasts with salt and pepper on both sides.
- In a small bowl, mix together the mango chutney, soy sauce, Dijon mustard, minced garlic, and ground ginger.
- Heat the olive oil in a skillet over medium-high heat. Sear the seasoned chicken breasts for 2-3 minutes on each side until they develop a golden brown crust.
- Transfer the seared chicken breasts to the prepared baking sheet.
- Pour the mango chutney mixture over the chicken breasts, spreading it evenly to coat each piece.
- Arrange the sliced bell peppers, onion, and broccoli around the chicken on the baking sheet.
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.
- Once cooked, remove the sheet pan from the oven and let it cool for a few minutes.
- Serve the Mango Chutney Chicken Sheet Pan with cooked rice or quinoa. Garnish with chopped fresh cilantro, if desired.
