Did you know mangoes and chicken is a thing in the kitchen? I just discovered a recipe called Mango Chutney Chicken Sheet Pan! It's delicious and deserves a space on your menu. Here's a recipe for Mango Chutney Chicken Sheet Pan:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup mango chutney
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cups broccoli florets
  • Cooked rice or quinoa, for serving
  • Chopped fresh cilantro, for garnish (optional)
Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a small bowl, mix together the mango chutney, soy sauce, Dijon mustard, minced garlic, and ground ginger.
  4. Heat the olive oil in a skillet over medium-high heat. Sear the seasoned chicken breasts for 2-3 minutes on each side until they develop a golden brown crust.
  5. Transfer the seared chicken breasts to the prepared baking sheet.
  6. Pour the mango chutney mixture over the chicken breasts, spreading it evenly to coat each piece.
  7. Arrange the sliced bell peppers, onion, and broccoli around the chicken on the baking sheet.
  8. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.
  9. Once cooked, remove the sheet pan from the oven and let it cool for a few minutes.
  10. Serve the Mango Chutney Chicken Sheet Pan with cooked rice or quinoa. Garnish with chopped fresh cilantro, if desired.
