- ½ cup full-fat coconut milk
- 3 large eggs
- 1 tablespoon pumpkin pie spice
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C).
- Mix almond flour, cassava flour, and sea salt in a bowl.
- Cut in the cold butter until crumbly.
- Add the beaten egg and cold water, and mix until a dough forms.
- Press the dough into a greased 9x9-inch baking pan to form the crust.
- In another bowl, whisk together pumpkin puree, coconut milk, eggs, pumpkin pie spice, maple syrup, and vanilla extract.
