Ingredients:
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 shallot, finely diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup white wine (or extra broth)
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste


Instructions:
  1. Pound the chicken breasts to an even 1-inch thickness and season both sides generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden brown and cooked through. Transfer to a plate and tent with foil to keep warm.
  3. Reduce heat to medium and add the diced shallot to the skillet. Sauté for 2 minutes until soft.
  4. Add the garlic and cook for 1 minute more until fragrant.
  5. Deglaze the pan by pouring in the chicken broth and white wine (or extra broth). Use a wooden spoon to scrape up any browned bits from the bottom of the pan.
  6. Let the liquids simmer for 3-4 minutes to reduce slightly. Then stir in the heavy cream and sun-dried tomatoes.
  7. Return the chicken breasts to the pan, ensuring they're coated and submerged in that luxurious sauce.
  8. Let it all simmer together for 5 minutes to thicken up the sauce and let those flavors marry.
  9. Remove from heat and stir in the fresh parsley. Give it a taste and adjust seasoning as needed.
  10. Transfer those saucy chicken breasts to plates or a platter and get ready to put a ring on it! 💍
