- 2 lbs (about 1 kg) potatoes (such as Yukon Gold or Russet), peeled and cut into chunks
- 4 tablespoons unsalted butter
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 celery stalks, finely chopped
- 3 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
- Salt and black pepper, to taste
- Optional toppings: crispy bacon bits, chopped chives, grated cheese
- Place the potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer the potatoes until they are fork-tender, about 15-20 minutes.
- Drain the cooked potatoes and return them to the pot. Mash the potatoes using a potato masher or fork until smooth and creamy.
- While the potatoes are still warm, add the butter to the pot and stir until it's melted and well incorporated into the mashed potatoes. Allow the potatoes to cool slightly.
- In a small bowl, mix together the mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth.
- Pour the mayonnaise mixture over the mashed potatoes and gently fold it in until evenly combined.
- Add the chopped celery, sliced green onions, and chopped parsley to the potato mixture. Season with salt and black pepper to taste. Stir everything together until well mixed.
- Transfer the mashed potato salad to a serving dish. If desired, sprinkle with crispy bacon bits, chopped chives, or grated cheese for extra flavor and garnish.
- Serve the mashed potato salad immediately while still warm, or chill it in the refrigerator for a few hours before serving for a cold salad option.
