INGREDIENTS​

  • 4 sub, hero or hoagie rolls, split lengthwise but still attached on one side
  • 1 egg
  • Kosher salt and black pepper
  • 2 garlic cloves, peeled
  • Extra-virgin olive oil, for greasing
  • 1pound ground beef
  • ½cup finely grated Parmesan
  • 2tablespoons chopped basil leaves
  • 2cups marinara sauce
  • 4slices mozzarella or provolone

PREPARATION​

Step 1: Preheat the broiler to high and position a rack no more than 6 inches from the heat source. If you don't have a broiler, refer to the tip provided. Using a fork, hollow out the interior of the rolls to obtain approximately 1 cup of breadcrumbs. Transfer the breadcrumbs to a large bowl, add ½ cup water, the egg, 1 teaspoon salt, and several grinds of pepper. Finely grate 1 garlic clove into the mixture and stir to combine. Let it rest for 5 minutes.

Step 2: Lightly grease a large (12-inch), oven-proof skillet with olive oil. Add the beef, Parmesan cheese, and chopped basil to the breadcrumb mixture. Gently combine with your hands, being careful not to overmix. Shape the mixture into 12 balls (about 2 heaping tablespoons/2 ounces each) and place them in the prepared skillet. Broil the meatballs until they are browned and nearly cooked through, about 5 to 7 minutes.

Step 3: Transfer the skillet to the stovetop. Pour the marinara sauce over the meatballs and stir to coat. Warm over medium-low heat while you toast the rolls: Arrange the rolls, cut-side up, on a baking sheet and broil until lightly golden, about 1 to 2 minutes. Rub the cut sides of the rolls with the remaining garlic clove.

Step 4: Divide the meatballs and sauce evenly among the rolls. Top each with mozzarella cheese. Broil until the mozzarella is melted and lightly browned, about 1 to 2 minutes. Garnish with additional grated Parmesan, basil leaves, and black pepper to taste.
