Hey everyone! I’ve been loving this super easy and delicious Mediterranean chicken wrap lately, and thought I’d share! It’s perfect for a quick lunch or light dinner, plus it’s packed with flavor. 🌿

Ingredients:

  • 2 chicken breasts (grilled or pan-seared, then sliced)
  • 4 large whole wheat wraps
  • 1 cup hummus (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • A handful of mixed greens (or spinach)
  • Tzatziki sauce for drizzling (optional, but sooo good)
  • Olive oil, salt, and pepper to taste
  • A sprinkle of oregano or fresh herbs like parsley
Instructions:

  1. Season & Cook Chicken: Season the chicken breasts with olive oil, salt, pepper, and a bit of oregano. Grill or pan-sear them until fully cooked, then slice into strips.
  2. Assemble the Wraps: Warm up your wraps, then spread a generous amount of hummus on each one.
  3. Layer the Veggies: Add some cherry tomatoes, cucumber slices, red onion, olives, and mixed greens.
  4. Add Chicken & Feta: Top with your sliced chicken and sprinkle some crumbled feta over it.
  5. Drizzle & Wrap: Drizzle with tzatziki sauce (if using) and fold up the wrap nice and tight.
  6. Enjoy! Cut in half and serve! It’s seriously refreshing and flavorful. 😋
