I wanted to share one of my go-to recipes for a fresh and satisfying salad that’s perfect for lunch or dinner. It's super easy to make, packed with flavor, and really healthy. Here's my recipe for a Mediterranean Chickpea Salad.

I wanted to share one of my go-to recipes for a fresh and satisfying salad that’s perfect for lunch or dinner. It's super easy to make, packed with flavor, and really healthy. Here's my recipe for a Mediterranean Chickpea Salad.
Ingredients:
- 1 can (15 oz) of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 pint of cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup of Kalamata olives, pitted and sliced
- 1/4 cup of crumbled feta cheese
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped (optional, but adds a nice touch)
- 2 tbsp of extra-virgin olive oil
- 1 tbsp of red wine vinegar
- 1 tbsp of lemon juice
- 1 tsp of dried oregano
- Salt and pepper to taste
- Prepare the Vegetables:
- In a large bowl, combine the chickpeas, diced cucumber, cherry tomatoes, red onion, olives, feta cheese, parsley, and mint (if using).
- Make the Dressing:
- In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper.
- Toss the Salad:
- Pour the dressing over the salad and toss everything together until well combined.
- Let it Marinate:
- For the best flavor, let the salad sit for at least 15-20 minutes before serving to allow the flavors to meld together.
