Mediterranean Chickpea Salad Recipe

Hey everyone,

I wanted to share one of my go-to recipes for a fresh and satisfying salad that’s perfect for lunch or dinner. It's super easy to make, packed with flavor, and really healthy. Here's my recipe for a Mediterranean Chickpea Salad.

Ingredients:

  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 pint of cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup of Kalamata olives, pitted and sliced
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped (optional, but adds a nice touch)
  • 2 tbsp of extra-virgin olive oil
  • 1 tbsp of red wine vinegar
  • 1 tbsp of lemon juice
  • 1 tsp of dried oregano
  • Salt and pepper to taste
Instructions:

  1. Prepare the Vegetables:
    • In a large bowl, combine the chickpeas, diced cucumber, cherry tomatoes, red onion, olives, feta cheese, parsley, and mint (if using).
  2. Make the Dressing:
    • In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper.
  3. Toss the Salad:
    • Pour the dressing over the salad and toss everything together until well combined.
  4. Let it Marinate:
    • For the best flavor, let the salad sit for at least 15-20 minutes before serving to allow the flavors to meld together.
This salad is super versatile—you can add grilled chicken or shrimp on top to make it more filling, or enjoy it as is for a light and refreshing meal. It's also great for meal prep since it keeps well in the fridge for a couple of days.
