I am so excited to share this Mediterranean Grilled Eggplant with Yogurt Sauce recipe with you all. It's packed with flavor, easy to make, and perfect for serving up at your next backyard barbecue. I always make this, and it's always a hit!

For the grilled eggplant:
- 2 medium eggplants, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 cup Greek yogurt
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chopped fresh mint
- Salt and black pepper, to taste
- Chopped fresh parsley
- Crumbled feta cheese
- Lemon wedges
- Preheat your grill to medium-high heat.
- Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
- Grill the eggplant slices for about 4-5 minutes per side, or until they are tender and have grill marks.
- While the eggplant is grilling, prepare the yogurt sauce. In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, extra virgin olive oil, chopped fresh mint, salt, and black pepper. Stir until well combined.
- Once the eggplant is done grilling, transfer the slices to a serving platter.
- Spoon the yogurt sauce over the grilled eggplant slices.
- Garnish with chopped fresh parsley, crumbled feta cheese, and lemon wedges.
- Serve immediately and enjoy!
