Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste
Instructions:

  1. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes, then fluff with a fork.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, olives, feta cheese, and parsley.
