- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt and pepper to taste
- In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes, then fluff with a fork.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, olives, feta cheese, and parsley.
- Drizzle with lemon juice and olive oil, then season with salt and pepper. Toss to combine before serving.
