Ingredients:

  • 2 lbs (about 1 kg) tripe (cleaned and cut into small pieces)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (14 oz) hominy (drained and rinsed)
  • 2 tomatoes (diced)
  • 1 jalapeño pepper (diced, optional for heat)
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Lime wedges, chopped cilantro, and sliced radishes for serving
Instructions:

  1. In a large pot, combine the tripe, diced onion, minced garlic, bay leaf, oregano, cumin, and enough water to cover everything.
  2. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2-3 hours or until the tripe is tender.
  3. Once the tripe is tender, add the diced tomatoes, jalapeño pepper (if using), and drained hominy to the pot.
  4. Continue to simmer the soup for another 30 minutes to allow the flavors to meld together.
  5. Season the menudo with salt and pepper to taste.
  6. Serve the menudo hot, garnished with lime wedges, chopped cilantro, and sliced radishes on the side. Enjoy with warm tortillas or crusty bread.

Wow, thanks for sharing this Menudo recipe! It looks like a flavorful dish with all those delicious ingredients. I've never tried Filipino cuisine before, but I'm definitely intrigued now. Can't wait to give it a go!:)
