Hi everyone! So, I recently binge-watched season 1 of Frieren: Beyond Journey's End, and let me tell you, I absolutely loved it! But what really caught my attention was the Merkur Pudding that Frieren loves so much. I just couldn't resist trying it out for myself because of my curiosity, so I came up with my own version of the dessert. Count on me, it turned out amazing! It has a soft and tangy sweet texture that I'm sure you'll love just as much as I did. So, what do you say? Are you ready to try it out for yourself? Let me know if you want the recipe! 🍮 🤤

Ingredients:

For Caramel:

  • 50 g sugar
  • 10 ml water

For Pudding Base:

  • 160 ml milk
  • 70 ml heavy cream
  • 1 whole egg
  • 1 egg yolk

For Topping:

  • 100g berries
  • 20-30g sugar
  • Corn starch

Instructions:

For Caramel:

  1. Heat sugar and water in a small saucepan.
  2. Allow the sugar to start browning, but be careful not to overdo it to avoid a burnt taste.
  3. Pour the liquid caramel into the mold and let it harden.

For Pudding Base:

  1. Whisk whole egg and egg yolk in a bowl.
  2. In a separate pot, heat milk, cream, and sugar until warm (avoid boiling).
  3. Slowly pour the hot liquid into the eggs while continuously stirring to prevent cooking the eggs too quickly.
  4. Strain the mixture to remove any possible egg white residue.
  5. Pour the mixture over the hardened caramel in the mold.

Baking:

  1. Preheat the oven to 150°C (300°F).
  2. Place the mold in a larger baking dish and add hot water to the dish (creating a water bath).
  3. Bake in the oven for 40-50 minutes, depending on the size of the mold. (40 minutes was sufficient for mine).

For Topping:

  1. In a saucepan, combine berries and sugar.
  2. Cook until the sugar dissolves and the berries soften.
  3. Strain the syrup and return it to the saucepan.
  4. Add cornstarch to the syrup to thicken it.
  5. Decorate the baked pudding with the berries and syrup.
  6. Serve and enjoy this delightful treat!

Note:

  • Be cautious with the caramel to avoid burning.
  • Ensure the pudding base is not boiled to prevent curdling.
  • Adjust sugar quantity in topping according to taste preference.
