I recently made Mexican Tostadas, and they were such a hit! These crispy corn tortillas topped with a variety of savory ingredients make for a perfect snack or a light meal. Here's a simple recipe to make these at home!

Ingredients:​

  • 6-8 corn tortillas (store-bought or homemade)
  • 2 tablespoons vegetable oil (for frying)
  • 1 cup refried beans (store-bought or homemade)
  • 1/2 lb cooked chicken (shredded), or ground beef/pork (optional)
  • 1 medium avocado, sliced
  • 1/2 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup sour cream or Mexican crema
  • 1/4 cup salsa or pico de gallo
  • Lime wedges (for serving)
  • Salt and pepper to taste

Instructions:​

1. Fry the Tostadas:​

  • Heat the vegetable oil in a large skillet over medium heat.
  • Fry the corn tortillas, one at a time, until they become golden and crispy, about 2-3 minutes on each side. You can also bake them in the oven if you prefer a healthier option.
  • Remove the fried tortillas and drain any excess oil on a paper towel. Set aside.

2. Prepare the Toppings:​

  • If you're using chicken, shred it with a fork. For ground beef or pork, cook the meat in a skillet until browned, then season with salt, pepper, and some cumin or chili powder for extra flavor.
  • In a bowl, mix together the shredded lettuce, diced tomato, chopped red onion, and cilantro. This will be your fresh topping.

3. Assemble the Tostadas:​

  • Spread a thin layer of refried beans over each crispy tortilla.
