    • 1 package (10 sheets) phyllo dough, thawed
    • 3 tablespoons melted butter
Instructions:

Make the Spiced Chickpea Filling:

  1. In a large bowl, mash half of the chickpeas with a fork or potato masher until slightly crumbled. You can leave the other half of the chickpeas more whole for a textural contrast.
  2. Stir in the crumbled feta cheese (if using), red onion, parsley, olive oil, cumin, coriander, smoked paprika, salt, and pepper. Mix well to combine.
Assemble the Phyllo Cups:
