  • 1 lb carrots, peeled and sliced into sticks

  • 2 tbsp pure maple syrup

  • 1 tbsp rice vinegar
  • 1 garlic clove, minced
  • 1 tsp freshly grated ginger
  • 1 tbsp sesame seeds
  • 2 tbsp chopped fresh cilantro (optional)
  • Salt and pepper, to taste
Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Carrots: Toss the carrot sticks with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. Roast Carrots: Roast the carrots for 20-25 minutes, or until tender and slightly caramelized, turning halfway through.
  4. Make Glaze: While the carrots are roasting, in a small saucepan, combine miso paste, maple syrup, soy sauce, rice vinegar, garlic, and ginger. Cook over medium heat until the mixture is smooth and slightly thickened, about 5 minutes.
  5. Glaze Carrots: Once the carrots are done roasting, remove them from the oven and toss them with the miso-maple glaze.
  6. Add Sesame Seeds: Sprinkle sesame seeds over the glazed carrots and return to the oven for an additional 5 minutes to allow the glaze to set.
  7. Garnish & Serve: Garnish with chopped cilantro if desired. Serve warm and enjoy!
