Miso-Maple Glazed Carrots with Sesame Seeds

- 1 lb carrots, peeled and sliced into sticks
- 2 tbsp olive oil
- 2 tbsp white miso paste
- 2 tbsp pure maple syrup
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 garlic clove, minced
- 1 tsp freshly grated ginger
- 1 tbsp sesame seeds
- 2 tbsp chopped fresh cilantro (optional)
- Salt and pepper, to taste
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Carrots: Toss the carrot sticks with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Roast Carrots: Roast the carrots for 20-25 minutes, or until tender and slightly caramelized, turning halfway through.
- Make Glaze: While the carrots are roasting, in a small saucepan, combine miso paste, maple syrup, soy sauce, rice vinegar, garlic, and ginger. Cook over medium heat until the mixture is smooth and slightly thickened, about 5 minutes.
- Glaze Carrots: Once the carrots are done roasting, remove them from the oven and toss them with the miso-maple glaze.
- Add Sesame Seeds: Sprinkle sesame seeds over the glazed carrots and return to the oven for an additional 5 minutes to allow the glaze to set.
- Garnish & Serve: Garnish with chopped cilantro if desired. Serve warm and enjoy!
