Hi guys, I wanted to share you the recipe of Mixed Seafood Ceviche Nemesis version , I was a bit nervous at first, you know, with all the chopping and marinating involved , but hey, it's surprisingly easy, and the taste? Oh boy, let's just say it's worth the effort!

- 1 1/2 pounds White fish (cod, tilapia, or your favorite)
- 1/4 pound Scallops
- 1/4 pound Shrimp, peeled and deveined
- 3/4 cup Lime juice (enough to cover the fish)
- 1/2 Red onion, chopped (about 1/2 cup)
- 2 tbsp Jalapeno pepper, chopped (about 1 large)
- 1 cup Cherry tomatoes, halved
- 1 Avocado, cubed
- 1/4 cup Cilantro, chopped
- 1 tsp Salt
- Freshly ground black pepper
- Rinse and pat dry the fish, shrimp, and scallops. Cut them into very small pieces (about 1/4 inch) and place them in a glass bowl.
- Cover the seafood with lime juice and 1/2 tsp salt. Ensure everything is completely covered; add more lime juice if necessary.
- Cover the bowl and refrigerate for 4 hours, stirring occasionally to make sure every piece gets that tangy marinade love.
- After 4 hours, add the jalapeno and onion, then refrigerate for another 2 hours. It's like a flavorful waiting game!
- When you're ready to dive in, toss in the tomatoes, avocado, cilantro, and remaining 1/2 tsp salt. Give it a gentle mix to let those flavors mingle.
- Garnish with lime wedges for that extra zing!
