Hey folks! Just wanted to share this awesome mixed sautéed veggies recipe I tried last night. It's got a bit of everything – bell peppers, mushrooms, broccoli, zucchini, you name it!
Ingredients:
1 tablespoon olive oil
1 teaspoon minced garlic
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
6 cremini mushrooms, chopped
4 broccoli florets, chopped
1/2 zucchini, chopped
1/2 yellow summer squash, chopped
1/2 teaspoon dried oregano
2 tablespoons soy sauce
tablespoons chicken stock
Instruction:
1. In a large sauté pan over medium-high heat, heat the olive oil.
2. Sauté the garlic for 1 minute.
3. Add all the vegetables and cook until slightly wilted, about 2 minutes.
4. Stir in oregano, soy sauce, and chicken stock. Cook until vegetables are fully wilted, about 3 minutes.
5. Remove from heat and serve.
