Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • Pinch of saffron threads (optional)
  • 1 can (14 ounces) diced tomatoes
  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pitted green olives, halved
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • Cooked couscous, for serving
  • Toasted almonds, for garnish

Instructions:

  1. In a tagine, Dutch oven, or large skillet, heat olive oil over medium heat. Add finely chopped onion and cook until softened and translucent, about 5 minutes.
  2. Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  3. Stir in ground cumin, ground coriander, ground cinnamon, ground ginger, ground turmeric, and saffron threads, if using. Cook for 1 minute to toast the spices.
  4. Add diced tomatoes (with their juices) to the skillet and stir to combine.
  5. Add cooked chickpeas, chopped dried apricots, and halved green olives to the skillet. Stir to coat the chickpeas evenly in the tomato-spice mixture.
  6. Reduce the heat to low, cover, and let the tagine simmer gently for 20-25 minutes, stirring occasionally, until the flavors meld together and the sauce thickens slightly.
  7. Stir in chopped fresh cilantro and season with salt and pepper to taste.
