- 1/2 cup dried apricots, halved
- 1/2 cup pitted green olives
- 1/4 cup chopped fresh cilantro
- Cooked couscous, for serving

- Heat olive oil in a large tagine or Dutch oven over medium heat. Add chopped onion and minced garlic, and cook until softened and fragrant, about 5 minutes.
