Ingredients:

  • 1 kg fresh mussels, cleaned and debearded
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (400g) diced tomatoes
  • 1/2 cup white wine (optional)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
Instructions:

  1. In a large pan or pot, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped onion, and sautรฉ until they become fragrant and translucent.
  3. Pour in the diced tomatoes and white wine (if using). Stir well to combine.
  4. Add the dried oregano, salt, and pepper to the sauce. Let it simmer for about 10 minutes to allow the flavors to meld together.
  5. Carefully add the cleaned mussels to the pan. Cover with a lid and let them cook for about 5-7 minutes, or until the mussels have opened up.
  6. Discard any mussels that haven't opened.
  7. Once cooked, transfer the mussels to a serving dish, and pour the tomato sauce over them.
  8. Garnish with chopped fresh parsley.
  9. Serve hot with crusty bread or over cooked pasta.
