- 1 kg fresh mussels, cleaned and debearded
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (400g) diced tomatoes
- 1/2 cup white wine (optional)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- In a large pan or pot, heat the olive oil over medium heat.
- Add the minced garlic and chopped onion, and sautΓ© until they become fragrant and translucent.
- Pour in the diced tomatoes and white wine (if using). Stir well to combine.
- Add the dried oregano, salt, and pepper to the sauce. Let it simmer for about 10 minutes to allow the flavors to meld together.
- Carefully add the cleaned mussels to the pan. Cover with a lid and let them cook for about 5-7 minutes, or until the mussels have opened up.
- Discard any mussels that haven't opened.
- Once cooked, transfer the mussels to a serving dish, and pour the tomato sauce over them.
- Garnish with chopped fresh parsley.
- Serve hot with crusty bread or over cooked pasta.
