Ingredients:
Sambal:
Toppings:
Fried anchovies, boiled egg, cucumber slices, peanuts
Steps:
- 2 cups rice
- 200ml coconut milk
- 2 pandan leaves
- Salt to taste
Sambal:
- Dried chilies (soaked + blended)
- Shallots, garlic, belacan (shrimp paste)
- Tamarind juice, sugar, salt
Toppings:
Fried anchovies, boiled egg, cucumber slices, peanuts
Steps:
- Cook rice with coconut milk, pandan, and salt.
- Fry blended sambal paste until fragrant, add tamarind, sugar, salt.
- Serve rice with sambal, crunchy anchovies, peanuts, cucumber & egg.
