Ingredients:


  • 2 cups rice
  • 200ml coconut milk
  • 2 pandan leaves
  • Salt to taste

Sambal:


  • Dried chilies (soaked + blended)
  • Shallots, garlic, belacan (shrimp paste)
  • Tamarind juice, sugar, salt

Toppings:
Fried anchovies, boiled egg, cucumber slices, peanuts


Steps:


  1. Cook rice with coconut milk, pandan, and salt.
  2. Fry blended sambal paste until fragrant, add tamarind, sugar, salt.
  3. Serve rice with sambal, crunchy anchovies, peanuts, cucumber & egg.
