  • 1/4 cup palm oil
  • 2 tablespoons ground crayfish
  • 2 bouillon cubes
  • Salt, to taste

Instructions:

  1. Soak the black-eyed peas in water for at least 4 hours or overnight.
  2. Drain the soaked beans and blend with the onions, bell pepper, and scotch bonnet peppers until smooth.
  3. Transfer the mixture to a bowl and add the palm oil, ground crayfish, bouillon cubes, and salt. Mix well.
  4. Prepare your steaming containers by greasing them with a little palm oil or lining them with banana leaves.
  5. Pour the moi moi mixture into the containers, filling them about 3/4 full.
  6. Steam the moi moi over medium heat for about 45 minutes to 1 hour, or until firm.
  7. Once done, allow to cool slightly before serving.
