Here's how to whip up this irresistible treat:
Ingredients:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh blackberries, plus extra for topping
- 1 cup heavy cream
- ¼ cup granulated sugar
- 1 tbsp lemon juice
- Zest of 1 lemon
Instructions:
1. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a lined baking dish and refrigerate.
2. In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mix until combined.
3. In a separate bowl, whip heavy cream and granulated sugar until stiff peaks form.
4. Gently fold whipped cream into the cream cheese mixture.
5. In a blender, puree blackberries with lemon juice and zest. Strain to remove seeds.
