Ingredients:

  • 3 large slices of leftover apple pie (about 13 oz. total)
  • 1 1/4 cups heavy cream
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon apple pie spice mix (or mix of ground cinnamon, nutmeg, allspice, and cloves)
  • 2 tablespoons caramel sauce (store-bought or homemade), divided

Instructions:
  1. Chill the bowl of a stand mixer and a 9" x 5" loaf pan in the refrigerator for at least 30 minutes.
  2. Separate the apple filling from the crust of each pie slice. Coarsely chop the filling and crust, keeping them separate.
  3. Using the whisk attachment on the stand mixer, beat the heavy cream, sweetened condensed milk, and apple pie spice mix on high speed until soft peaks form, about 6 to 7 minutes.
  4. Gently fold in one-third of the chopped apple pie filling using a spatula. If the mixture deflates a bit, beat it for another minute.
  5. In a chilled loaf pan, spread half of the cream mixture evenly on the bottom. Drizzle 1 tablespoon of caramel sauce in an "S" shape over the cream mixture. Use a toothpick to create a swirl pattern by dragging the caramel in the opposite direction.
  6. Spread the remaining apple pie filling over the caramel layer. Top with the remaining cream mixture, then repeat the swirling process with the remaining 1 tablespoon of caramel sauce.
  7. Sprinkle the chopped apple pie crust over the top.
  8. Cover the loaf pan tightly with plastic wrap, pressing it directly onto the surface of the ice cream.
  9. Freeze the ice cream for at least 6 hours or up to 2 weeks before serving.

Wow, this sounds like the ultimate fall treat! 🍦🍏 I think combining the flavors of caramel, apple pie, and ice cream is pure genius, though I wonder if the recipe includes chunks of apple or swirls of caramel throughout. Can't wait to scoop up a bowl!
