Oden is a comforting Japanese stew featuring a variety of ingredients simmered in a flavorful dashi broth. It’s perfect for chilly days and offers a delicious mix of textures and flavors.
**Ingredients**:
- 4 cups dashi or vegetable broth
- 1/4 cup soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 1 daikon radish, peeled and sliced into rounds
- 4 eggs, hard-boiled
- 200g tofu, cut into cubes
- 200g konnyaku (yam cake), cut into pieces
- 200g fish cakes or assorted oden ingredients
- Green onions and mustard (for serving)
**Instructions**:
1. In a large pot, combine dashi, soy sauce, mirin, and sugar. Bring to a simmer.
2. Add daikon radish and simmer for about 20 minutes until tender.
3. Add tofu, konnyaku, and fish cakes. Simmer for another 10-15 minutes.
4. Stir in hard-boiled eggs and heat through.
