Old-Fashioned Caramel Cake​

Ingredients:

  • 1 cup sour cream
  • 1/4 cup milk
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon rum extract
  • Caramel Frosting
Directions:

  1. Prepare:
    • Preheat your oven to 350°F.
    • In a small bowl, combine the sour cream and milk. Set aside.
  2. Cream Butter and Sugar:
    • Using an electric mixer, beat the softened butter at medium speed until it becomes creamy.
    • Gradually add the sugar, continuing to beat well.
    • Add the eggs one at a time, beating thoroughly after each addition.
  3. Finish Batter and Add to Pans:
    • In a separate bowl, combine the flour, baking powder, and salt.
    • Alternately add the flour mixture and the sour cream mixture to the butter mixture, starting and ending with the flour mixture. Beat at medium-low speed until blended after each addition.
    • Stir in the vanilla and rum extracts.
    • Pour the batter into 2 greased and floured 9-inch round cake pans.
  4. Bake Cake Layers:
    • Bake in the preheated oven for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean.
    • Cool the cake layers in the pans on wire racks for 10 minutes.
    • Remove the cakes from the pans and let them cool completely on wire racks, about 2 hours.
  5. Frost Cake Layers:
    • Once the cake layers are completely cool, spread the Caramel Frosting between the layers, as well as on the top and sides of the cake.
