Ingredients:

  • 6 tablespoons unsalted butter, divided
  • 3 pounds yellow squash, sliced 1/4-inch thick (about 5 medium squash)
  • 1 medium yellow onion, chopped (approximately 1 1/2 cups)
  • 2 teaspoons kosher salt, divided
  • 2 large eggs, lightly beaten
  • 1 (8-ounce) container sour cream
  • 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
  • 2 ounces Swiss cheese, shredded (about 1/2 cup)
  • 1/2 cup mayonnaise
  • 2 teaspoons fresh thyme, chopped
  • 1/2 teaspoon black pepper
  • 2 sleeves round buttery crackers (such as Ritz), coarsely crushed
  • 1 ounce Parmesan cheese, shredded (about 1/4 cup)
Directions:

  1. Prepare Oven and Baking Dish:
    • Preheat your oven to 350°F.
    • Grease an 11x7-inch (2-quart) baking dish with cooking spray.
  2. Cook the Squash:
    • In a large skillet, melt 3 tablespoons of butter over medium-high heat.
    • Add the sliced squash, chopped onion, and 1 teaspoon of kosher salt.
    • Cook, stirring frequently, until the squash is just tender and the liquid has evaporated, about 10 minutes.
  3. Drain Excess Liquid:
    • Transfer the squash and onion mixture to a colander set over a bowl.
    • Allow it to drain for 5 minutes, then discard any collected liquid.
  4. Prepare the Casserole Filling:
    • In a large bowl, mix together the eggs, sour cream, shredded Cheddar and Swiss cheeses, mayonnaise, thyme, black pepper, and the remaining 1 teaspoon of salt.
    • Gently fold in the drained squash mixture.
  5. Assemble the Casserole:
    • Spoon the mixture into the prepared 11x7-inch baking dish.
  6. Make the Cracker Topping:
    • In a medium microwavable bowl, melt the remaining 3 tablespoons of butter in the microwave on high for about 25 seconds.
    • Toss the coarsely crushed crackers with the melted butter and shredded Parmesan cheese until well combined.
  7. Top and Bake:
    • Evenly sprinkle the cracker mixture over the casserole.
    • Bake in the preheated oven until the topping is golden brown, about 20 minutes.
