Old-School Squash Casserole Recipe
Ingredients:
- 6 tablespoons unsalted butter, divided
- 3 pounds yellow squash, sliced 1/4-inch thick (about 5 medium squash)
- 1 medium yellow onion, chopped (approximately 1 1/2 cups)
- 2 teaspoons kosher salt, divided
- 2 large eggs, lightly beaten
- 1 (8-ounce) container sour cream
- 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
- 2 ounces Swiss cheese, shredded (about 1/2 cup)
- 1/2 cup mayonnaise
- 2 teaspoons fresh thyme, chopped
- 1/2 teaspoon black pepper
- 2 sleeves round buttery crackers (such as Ritz), coarsely crushed
- 1 ounce Parmesan cheese, shredded (about 1/4 cup)
- Prepare Oven and Baking Dish:
- Preheat your oven to 350°F.
- Grease an 11x7-inch (2-quart) baking dish with cooking spray.
- Cook the Squash:
- In a large skillet, melt 3 tablespoons of butter over medium-high heat.
- Add the sliced squash, chopped onion, and 1 teaspoon of kosher salt.
- Cook, stirring frequently, until the squash is just tender and the liquid has evaporated, about 10 minutes.
- Drain Excess Liquid:
- Transfer the squash and onion mixture to a colander set over a bowl.
- Allow it to drain for 5 minutes, then discard any collected liquid.
- Prepare the Casserole Filling:
- In a large bowl, mix together the eggs, sour cream, shredded Cheddar and Swiss cheeses, mayonnaise, thyme, black pepper, and the remaining 1 teaspoon of salt.
- Gently fold in the drained squash mixture.
- Assemble the Casserole:
- Spoon the mixture into the prepared 11x7-inch baking dish.
- Make the Cracker Topping:
- In a medium microwavable bowl, melt the remaining 3 tablespoons of butter in the microwave on high for about 25 seconds.
- Toss the coarsely crushed crackers with the melted butter and shredded Parmesan cheese until well combined.
- Top and Bake:
- Evenly sprinkle the cracker mixture over the casserole.
- Bake in the preheated oven until the topping is golden brown, about 20 minutes.
- Serve:
- Remove from the oven and let it sit for a few minutes before serving.
