Squash & Spinach Quesadillas
Ingredients:
- 1 small butternut squash, peeled and thinly sliced
- 1 cup fresh spinach leaves
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- Sour cream and salsa for serving
Instructions:
- Heat olive oil in a pan over medium heat. Add the sliced squash, cumin, chili powder, salt, and pepper. Cook for 8-10 minutes until tender and lightly golden.
- In a separate pan, warm a tortilla. Add a layer of shredded cheese, cooked squash, and spinach. Top with another tortilla.
- Cook the quesadilla for 2-3 minutes on each side until golden and the cheese is melted. Repeat with the remaining ingredients.
- Slice and serve with sour cream and salsa on the side!
