One-Pan Baked Lemon Herb Chicken with Vegetables

  • 1 teaspoon dried thyme

Instructions:​

1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
2. Prepare the Chicken and Vegetables:
  • In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Mix well.
  • Add the chicken thighs (or breasts) to the bowl and toss to coat evenly with the marinade. Let it sit for 10-15 minutes for extra flavor.
3. Assemble the Pan:
  • On a large baking sheet, arrange the halved baby potatoes, carrots, bell pepper, and onion in an even layer.
  • Drizzle the remaining marinade over the vegetables, making sure they are coated well. If you like, you can add a little extra olive oil or a pinch of salt and pepper for seasoning.
4. Bake:
  • Place the chicken thighs on the baking sheet with the vegetables, skin-side up. Arrange everything in a single layer for even cooking.
