- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon soy sauce
- 1/2 cup chicken broth
- Fresh parsley, chopped (for garnish, optional)
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a large oven-safe skillet or frying pan, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, or until they are golden brown. Remove the chicken from the pan and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
- Reduce the heat to medium-low. Add the honey, Dijon mustard, whole grain mustard, and soy sauce to the skillet. Stir to combine and cook for another minute.
- Return the chicken breasts to the skillet, nestling them into the honey mustard sauce. Pour the chicken broth into the skillet around the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once cooked, remove the skillet from the oven. Spoon some of the sauce over the chicken breasts and garnish with chopped parsley, if desired.
- Serve the honey mustard chicken hot, with additional sauce spooned over the top.
