- 200g sataw (stink beans), ends trimmed and cut into 1-inch pieces
- 200g shrimp, peeled and deveined (or substitute with pork or chicken)
- 3-4 cloves garlic, minced
- 2-3 Thai chilies, finely chopped (adjust to taste)
- 1 tbsp shrimp paste
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp sugar
- Vegetable oil for cooking
- Fresh Thai basil leaves, for garnish (optional)
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add minced garlic and chopped Thai chilies. Stir-fry until fragrant.
- Add shrimp paste to the wok and stir-fry for about 1 minute until aromatic.
- Add shrimp (or your choice of meat) to the wok and cook until almost done.
- Add sataw (stink beans) to the wok and stir-fry for 2-3 minutes until tender-crisp.
- Season with oyster sauce, soy sauce, and sugar. Stir well to combine.
- Remove from heat and garnish with fresh Thai basil leaves if desired.
