- 2 tbsp vegetable oil
- 3-4 cloves garlic, minced
- 1 shallot, thinly sliced
- 1 bell pepper, sliced (any color)
- 1/2 cup Thai basil leaves
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- Fresh cilantro leaves, for garnish
- Cooked jasmine rice, to serve
- Heat oil in a wok or large skillet over medium-high heat. Add garlic and shallot, stir-fry until fragrant.
- Add red curry paste to the wok, stir-fry for 1-2 minutes until aromatic.
- Add catfish fillet pieces to the wok, stir-fry until they are cooked through.
- Stir in bell pepper slices, Thai basil leaves, fish sauce, soy sauce, oyster sauce, and sugar. Cook for another 2-3 minutes until the vegetables are tender-crisp.
- Remove from heat and garnish with fresh cilantro leaves.
