I just want to let everyone know that my recipe will enable you to elevate the classic sandwich experience in a way that is going to leave you wishing you had discovered it sooner. Farewell to common bacon and hello to the unique Italian style of pancetta, and the delicious burrata cheese that is simply a treat. Ingredients:

  • 1 pound focaccia
  • 8 ounces thinly sliced pancetta
  • 1/4 cup olive oil
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup mayonnaise
  • Zest of 1 lemon and 1 teaspoon lemon juice
  • 2 beefsteak tomatoes, sliced
  • 8 ounces burrata cheese, drained
  • Small head of butter lettuce

Directions:

  1. Preheat the oven to 425Β°F.
  2. Split the focaccia in half horizontally and place on a baking sheet. Arrange the pancetta over one half and brush with 1 tablespoon of olive oil. Brush the other half with the remaining olive oil. Bake until the pancetta is golden and the focaccia is golden brown, about 30 minutes.
  3. In a small bowl, mix together the basil, mayonnaise, lemon zest, and lemon juice.
  4. Once baked, transfer both pieces of focaccia to a cutting board. Top the pancetta with sliced tomatoes. Cut the burrata cheese into quarters and spread evenly over the tomatoes. Add the lettuce on top. Spread the basil mayonnaise on the other piece of focaccia and place on top of the lettuce.
  5. Cut the sandwich into 4 or 6 pieces and serve.
