Ingredients:​

  • 4 white fish fillets (such as cod, tilapia, or haddock)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 2 tbsp milk
  • 2 tbsp olive oil or melted butter
  • Lemon wedges, for serving

Instructions:​

  1. Prepare the Fish:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Pat the fish fillets dry with paper towels and season both sides with salt and pepper.
  2. Prepare the Coating:
    • In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, salt, and pepper.
    • In another shallow bowl, place the flour.
    • In a third bowl, whisk together the egg and milk.
  3. Coat the Fish:
    • Dredge each fish fillet in the flour, shaking off any excess.
    • Dip the floured fish into the egg mixture, allowing any excess to drip off.
    • Press the fish into the breadcrumb mixture, ensuring an even coating on all sides.
  4. Bake the Fish:
    • Place the coated fish fillets on the prepared baking sheet.
    • Drizzle the fillets with olive oil or melted butter for extra crispiness.
    • Bake in the preheated oven for 12-15 minutes, or until the fish is golden brown and flakes easily with a fork.
  5. Serve:
    • Transfer the fish to plates and serve immediately with lemon wedges on the side.
