  • 1/2 cup soy sauce
  • 1/2 cup oyster sauce
  • 1/4 cup brown sugar
  • 1 head garlic, minced
  • 1 onion, chopped
  • 2-3 star anise
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 tablespoon whole peppercorns
  • 2 cups water
  • 2 tablespoons cooking oil
  • Salt, to taste
  • Green onions, chopped (for garnish)
  • Hard-boiled eggs (optional, for serving)

    Instructions:
  1. Prepare the Pork Leg: Rinse the pork leg under cold water and pat it dry with paper towels. Make a few shallow slits on both sides of the pork leg.
  2. Make the Braising Sauce: In a bowl, mix together soy sauce, oyster sauce, brown sugar, minced garlic, chopped onion, star anise, cinnamon stick, bay leaf, and whole peppercorns.
  3. Marinate the Pork Leg: Place the pork leg in a large bowl or resealable plastic bag. Pour the prepared sauce over the pork leg, making sure it's evenly coated. Marinate for at least 1 hour in the refrigerator, or preferably overnight for better flavor infusion.
  4. Braise the Pork Leg: Heat cooking oil in a large pot over medium-high heat. Remove the pork leg from the marinade (reserve the marinade) and sear it on all sides until browned.
  5. Add the Marinade and Water: Pour the reserved marinade over the seared pork leg in the pot. Add enough water to cover the pork leg. Bring to a boil.
  6. Simmer and Cook: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2 to 3 hours or until the pork leg is tender. Occasionally check and add more water if needed.
  7. Finish and Serve: Once the pork leg is tender, season with salt to taste. Transfer the Pata Tim to a serving dish. Garnish with chopped green onions. You can also serve it with hard-boiled eggs if desired.
  8. Enjoy: Serve your delicious Pata Tim with steamed rice and enjoy!
