Ingredients

- 4 cups fresh peaches, peeled and sliced
- 2 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Fruit Filling:
- In a large bowl, combine the sliced peaches, blueberries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss until the fruit is evenly coated.
- Pour the fruit mixture into a 9x13-inch baking dish.
- Make the Cobbler Topping:
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined.
- Assemble the Cobbler:
- Drop spoonfuls of the cobbler topping over the fruit filling, spreading it out as evenly as possible.
- If desired, sprinkle the top with coarse sugar for extra crunch.
- Bake:
- Bake the cobbler for 35-40 minutes, or until the topping is golden brown and the fruit filling is bubbly.
- Allow the cobbler to cool slightly before serving.
- Serve:
- Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
