For the Filling:
- 6 cups fresh or frozen peaches, peeled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup boiling water
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish or a similar-sized casserole dish.
- Prepare Peach Filling: In a large bowl, combine the sliced peaches, granulated sugar, flour, cinnamon, and nutmeg. Stir until the peaches are evenly coated. Transfer the peach mixture to the prepared baking dish and spread it out evenly.
- Make Cobbler Topping: In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Pour the boiling water over the flour mixture and stir until just combined.
- Assemble Cobbler: Drop spoonfuls of the cobbler topping over the peach filling, covering it as evenly as possible.
- Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler topping is golden brown and the peach filling is bubbly.
- Serve: Allow the Peach Cobbler to cool slightly before serving. Enjoy warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
- Store: Leftover cobbler can be stored covered in the refrigerator for up to 3 days. Reheat individual portions in the microwave or oven before serving.
