For the filling:
- 6 cups fresh or canned sliced peaches (about 6-8 peaches)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or a similar-sized dish.
- In a large bowl, toss the sliced peaches with granulated sugar, lemon juice, and flour until well coated. Transfer the peach mixture to the prepared baking dish, spreading it out evenly.
- In another bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt for the crumble topping. Mix well.
- Add the cold cubed butter to the oat mixture. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the peaches in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
- Remove from the oven and let cool slightly before serving.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
