  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 cup unsalted peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

    Instructions
  1. Prepare Your Workspace:
    • Grease a baking sheet or line it with parchment paper. Also, have a heatproof spatula ready.
  2. Cook the Sugar Mixture:
    • In a medium saucepan, combine the sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
    • Attach a candy thermometer to the side of the saucepan. Continue cooking without stirring until the mixture reaches 300°F (149°C), or the "hard crack" stage.
  3. Add the Peanuts:
    • Once the sugar mixture reaches 300°F, quickly stir in the peanuts. Continue to cook for another 2-3 minutes, until the peanuts are golden and fragrant.
  4. Finish the Brittle:
    • Remove the saucepan from heat and immediately stir in the butter and vanilla extract.
    • Quickly add the baking soda and stir until the mixture becomes light and foamy.
  5. Spread the Brittle:
    • Pour the mixture onto the prepared baking sheet. Use the spatula to spread it out into an even layer.
    • Let the brittle cool completely, about 30 minutes.
  6. Break into Pieces:
    • Once cooled, break the brittle into pieces and enjoy.
