Ingredients

- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk (for desired consistency)
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- Make the Peanut Butter Cookies:
- In a large bowl, beat the softened butter, peanut butter, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Make the Peanut Butter Filling:
- In a medium bowl, beat together the peanut butter and softened butter until creamy.
- Gradually add the powdered sugar, mixing until smooth.
- Add the vanilla extract and 2-3 tablespoons of milk, one tablespoon at a time, until the filling reaches your desired consistency.
- Assemble the Whoopie Pies:
- Once the cookies are completely cool, spread a generous amount of the peanut butter filling onto the flat side of one cookie.
- Top with another cookie, flat side down, to create a sandwich.
- Repeat with the remaining cookies and filling.
