Red Velvet Whoopie Pies Recipe
Ingredients
For the Whoopie Pies:- 2 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 tablespoon red food coloring
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prep:Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. Let's get these whoopie pies started!
- Mix the Dry Ingredients:In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. This is your dry mix magic!
- Cream the Butter and Sugar:In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract, and beat until well combined. Get that smooth and creamy texture!
- Combine the Buttermilk and Food Coloring:In a small bowl, mix the buttermilk with the red food coloring. This will give your whoopie pies that gorgeous red velvet hue.
- Alternate Dry and Wet Ingredients:Gradually add the dry ingredients to the butter mixture, alternating with the red buttermilk mixture. Start and end with the dry ingredients. Mix until just combined. Don't overdo it – we want fluffy whoopie pies!
- Scoop and Bake:Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the tops are set and spring back when lightly touched. Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely. Patience is key!
- Prepare the Cream Cheese Filling:While the whoopie pies cool, beat the butter and cream cheese together until smooth. Gradually add the powdered sugar, one cup at a time, beating until fluffy. Stir in the vanilla extract. Your filling should be creamy and irresistible!
- Assemble the Whoopie Pies:Spread a generous amount of cream cheese filling on the flat side of half of the whoopie pies. Top with the remaining halves, flat side down, to create a sandwich. Ta-da! You've got yourself some fabulous whoopie pies!
- Enjoy!Share these delightful Red Velvet Whoopie Pies with friends and family, or savor them all by yourself – no judgment here!
