Ingredients:
- 1 cup white sugar
- ½ cup light corn syrup
- ¼ cup water
- ¼ teaspoon salt
- 1 cup peanuts
- 2 tablespoons unsalted butter, softened
- 1 teaspoon baking soda
- Prepare Ingredients: Before starting, have all ingredients measured and ready.
- Prepare Baking Sheet: Grease a large rimmed baking sheet and set aside.
- Cook the Mixture: In a heavy 2-quart saucepan over medium heat, combine sugar, corn syrup, water, and salt. Stir until the sugar is dissolved and the mixture comes to a boil, approximately 5 minutes.
- Add Peanuts and Cook: Stir in the peanuts and attach a candy thermometer to the side of the pan. Cook, stirring occasionally, until the temperature reaches 300 to 310 degrees F (150 to 155 degrees C).
- Remove from Heat: Once at the correct temperature, remove the saucepan from heat. Quickly stir in the softened butter and baking soda until well combined.
- Pour and Shape: Immediately pour the hot mixture onto the prepared baking sheet. Use two forks to quickly spread and pull the brittle into a 12x14-inch rectangle while still hot. Allow to cool completely until firm, which typically takes at least 30 minutes.
- Break into Pieces: Once cooled and hardened, use a mallet or similar tool to break the peanut brittle into bite-sized pieces.
