- 6 garlic cloves, minced
- 2 tablespoons dried oregano
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup orange juice
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1/4 cup fresh cilantro, chopped (optional)
- 1 onion, sliced (optional)
- Preheat your oven to 325°F (160°C).
- In a small bowl, mix together the minced garlic, dried oregano, ground cumin, paprika, salt, pepper, olive oil, orange juice, lime juice, and white vinegar to make the marinade.
- Place the pork shoulder in a large roasting pan or baking dish.
- Use a knife to make several deep cuts or slashes all over the pork shoulder. This will allow the marinade to penetrate the meat better.
- Rub the marinade all over the pork shoulder, making sure to get it into the cuts you made.
- If desired, scatter the sliced onion and chopped cilantro over the pork shoulder.
- Cover the roasting pan or baking dish with aluminum foil and let the pork marinate in the refrigerator for at least 4 hours, or preferably overnight.
- Once marinated, remove the pork from the refrigerator and let it come to room temperature for about 30 minutes.
- Place the covered roasting pan or baking dish in the preheated oven and roast the pork for about 3-4 hours, or until it is very tender and easily shreds with a fork.
- About halfway through the cooking time, uncover the pork to allow the skin to crisp up and become golden brown.
- Once the pork is done, remove it from the oven and let it rest for about 10-15 minutes before slicing or shredding.
- Serve the Puerto Rican-style roast pork hot with your favorite side dishes, such as rice and beans, tostones (fried plantains), or a simple salad.
