- 1 cup long-grain rice
- 4 cups water
- 1/2 teaspoon saffron threads
- 2 cups sugar
- 1/4 cup rose water
- Slivered almonds and pistachios, for garnish
- Ground cinnamon, for garnish
Instructions:
- Rinse the rice under cold water until the water runs clear.
- In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and reduce the heat to low. Simmer the rice, uncovered, for about 30 minutes or until it's very soft and the water has been absorbed.
- While the rice is cooking, crush the saffron threads in a mortar and pestle, then dissolve them in 1/4 cup of hot water. Let the saffron water steep for a few minutes.
- Once the rice is cooked, add the saffron water, sugar, and rose water to the pot. Stir well to combine.
- Increase the heat to medium and cook the mixture, stirring frequently, until it thickens to a pudding-like consistency. This should take about 15-20 minutes.
- Remove the pot from the heat and let the rice pudding cool slightly.
- Serve the saffron rice pudding warm or chilled, garnished with slivered almonds, pistachios, and a sprinkle of ground cinnamon on top.
