Hey there, foodies! 🌟 Today, I'm thrilled to share with you a recipe for a dessert that's as rich in history as it is in flavor: Persian Saffron Rice Pudding, also known as 'Sholeh Zard'! 🍚✨ This delightful treat combines the luxurious aroma of saffron with the subtle sweetness of rose water, creating a dish that's sure to tantalize your taste buds. Whether you're celebrating a special occasion or simply craving something exotic, this dairy-free and vegan-friendly dessert is a must-try!!!

Ingredients:
  • 1 cup long-grain rice
  • 4 cups water
  • 1/2 teaspoon saffron threads
  • 2 cups sugar
  • 1/4 cup rose water
  • Slivered almonds and pistachios, for garnish
  • Ground cinnamon, for garnish

Instructions:
  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and reduce the heat to low. Simmer the rice, uncovered, for about 30 minutes or until it's very soft and the water has been absorbed.
  3. While the rice is cooking, crush the saffron threads in a mortar and pestle, then dissolve them in 1/4 cup of hot water. Let the saffron water steep for a few minutes.
  4. Once the rice is cooked, add the saffron water, sugar, and rose water to the pot. Stir well to combine.
  5. Increase the heat to medium and cook the mixture, stirring frequently, until it thickens to a pudding-like consistency. This should take about 15-20 minutes.
  6. Remove the pot from the heat and let the rice pudding cool slightly.
  7. Serve the saffron rice pudding warm or chilled, garnished with slivered almonds, pistachios, and a sprinkle of ground cinnamon on top.
