Ingredients​

For the Steaks:

  • 4 sirloin steaks, about 1 1/4 pounds total
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 teaspoons mesquite seasoning (see note)
For the Garlic Herb Butter:

  • 1/2 cup butter, softened
  • 1/2 teaspoon garlic powder
  • 1 teaspoon minced garlic
  • 1 tablespoon finely chopped fresh parsley (see note)
  • 2 teaspoons fresh thyme (see note)

Instructions​

  1. Prepare the Garlic Herb Butter:
    • In a bowl, combine the softened butter, garlic powder, minced garlic, parsley, and thyme. Set aside.
  2. Cook the Steaks:
    • Pat the steaks dry with a paper towel.
    • Rub both sides of each steak with olive oil.
    • Season the steaks generously with salt, pepper, and mesquite seasoning.
    • Heat a skillet over medium heat or preheat a grill to medium heat.
    • Cook the steaks for 5-8 minutes on each side, or until they reach your desired level of doneness (internal temperature of 145°F for medium-well). Adjust cooking time based on thickness and preference. (See note for oven instructions.)
  3. Rest and Serve:
    • Remove the steaks from the heat and let them rest for at least 5 minutes.
    • Top each steak with a generous dollop of garlic herb butter before serving.

Notes​

  • Steaks: Opt for steaks that are at least 3/4 inch thick for best results.
  • Mesquite Seasoning: McCormick’s Grill Mates Mesquite seasoning is recommended for its robust flavor.
  • Fresh Herb Substitute: If fresh herbs are unavailable, substitute with 1 teaspoon of Herbs de Provence or your preferred Italian seasoning blend.
  • Oven Instructions: For oven preparation, sear the steaks in a cast-iron pan over high heat for 1-2 minutes per side. Transfer the pan to a preheated oven (450°F) and roast for 10 minutes (6 minutes for thinner cuts). Rest the steaks for at least 5 minutes before slicing.
